Date Caramel Two Ways: Sweet & Simple vs Sweet & Salty
These date caramel recipes taste decadent and sinful, but without the refined sugar you find in traditional caramel sauces. The natural sweetness of Medjool dates combined with our silky nutty almond milk creates a creamy mixture that will tingle your senses along with any sweeties you want to share it with. Our favorite way to enjoy them is by dipping juicy strawberries into the sauce, and then drizzling with melted chocolate. (Hint hint: Valentine's Day 😉)
Sweet & Simple
1 cup of pitted Medjool dates - firmly packed - approx 215 grams
1 cup of Totally Nuts Almond Milk - Original or Vanilla
Optional: 1/2 tsp sea salt & 1 tsp vanilla
Pit your dates before measuring and chop them up in order to make blending easier. Soak the dates in almond milk for 30 minutes or longer. Transfer to a food processor, blend, scraping down the sides as needed until you get a smooth paste. Feel free to add more milk or water to make it thinner. If your dates were not very juicy you will want to add more liquid. To get a smoother consistency transfer to a blender after, be careful not to overheat it while blending. Enjoy with apples, strawberries, as a sweetener for coffee or tea, put it on top of ice cream or other sweet treats.
Sweet & Salty
1 cup of Totally Nuts Almond Milk - Original or Vanilla
1/2 tsp sea salt
1 tsp vanilla extract
3 Tbsp maple syrup
2-4 Tbsp of peanut butter

Transfer to a food processor, add the maple syrup and blend, scraping down the sides as needed until you get a smooth paste. Feel free to add more milk or water to make it thinner. If your dates were not very juicy you will want to add more liquid. At this stage you can add the peanut butter ( it is much easier to blend in once its a paste). Feel free to add more peanut butter, salt, vanilla or maple to your liking.
To get a smoother consistency transfer to a blender after, be careful not to overheat it while blending. Enjoy with apples, strawberries ... put it on top of ice cream or other sweet treats .. or our favorite way - enjoy it plain right out of the jar!
